PHILOSOPHY

The smallest vineyard in the appellation.I didn't aim for grandeur.I aim for precision.A living garden, cultivated using permaculture principles.I walk through it every day with the same care, aware that the soil, the sky, and the vines know more than I do.Gentle winemaking, measured extractions.
Aging in large oak casks, amphorae, and jars, to preserve the fruit's purity.
Intentionally limited production.Far away from Bordeaux standards,A precise, approachable, structured Saint-Émilion, where depth is expressed with subtlety.


VINEYARD

90 % Merlot, 10 % Cabernet Franc.Vines over 50 years old that I didn't plant, but for which I feel responsible.No herbicides. No fertilizers. No synthetic products.Permanent ground cover that we let thrive.Sheep grazing.Trees growing.Yields kept low (35 hL/ha)Not by design, but out of respect.I intervene minimally.
Because the less I do, the better the vines express themselves.


CELLAR

Hand-harvested, bunch by bunch.Gently sorted by density: I only keep grapes perfectly ripe.Foot-crushed, because the fruit deserves to be handled gently.Natural fermentation, at the pace of the yeasts. Gentle extraction. Long maceration.I don't force anything.Manual and vertical pressing, slow, very slow.Then 18 months in large oak casks, amphorae, jars, and ceramic eggs.I trust in the passing days.

Three cuvées.Three expressions of the same place.Same origin.
Same standards.
Only the aging varies.
The substance evolves.

LE FOUDRE

Aged for 18 months in 12 hL Austrian oak casksDense dark fruits.
Blonde tobacco, licorice.
Strong structure. Spicy finish.


LA JARRE

18 months in a 6 hL Florentine terracotta jarFresh black fruits. Delicate herbs.
Direct, precise palate.
Clean, mineral finish.
